When it comes to pasta dishes, few can compete with the creamy comfort of Alfredo sauce. This beloved sauce has an interesting history and a namesake that has become iconic in Italian-American cuisine. Join us this month as one of your favorite Nashua restaurants delves into the origins of Alfredo sauce and uncovers the story behind its name.

The Birth of Alfredo Sauce

The origins of Alfredo sauce can be traced back to early 20th-century Rome, Italy. The story begins with Alfredo di Lelio, a restaurateur who ran a small eatery called Alfredo alla Scrofa. In 1914 Alfredo’s wife, Ines, was recovering from childbirth and had lost her appetite. Seeking to create a simple, yet filling dish that could appeal to her, Alfredo prepared a special pasta sauce using just three ingredients: butter, Parmesan cheese, and fettuccine noodles.

This simple dish was designed to be light on her stomach while providing the comfort in a meal she was searching for. The dish proved to be a success and soon became a favorite among the restaurant’s patrons.

The Hollywood Connection

Alfredo’s fame began to spread beyond Italy in the 1920s. This is thanks to a visit by Hollywood stars Douglas Fairbanks and Mary Pickford. The famous couple dined at Alfredo’s restaurant while on their honeymoon in Rome and were so enchanted by the dish that they asked for the recipe to take back with them to the United States.

Upon returning to Hollywood, Fairbanks and Pickford began serving Alfredo’s pasta to their friends and fellow celebrities, which sparked widespread interest in the dish. They even gifted Alfredo a golden fork and spoon in appreciation. This Hollywood endorsement helped Alfredo sauce gain international recognition and become a staple in Italian-American cuisine.

Why It’s Called Alfredo

As you probably guessed, the sauce is named after its creator, Alfredo di Lelio. The name “Alfredo” has become synonymous with the creamy, buttery pasta dish that Alfredo crafted with such care and simplicity. It’s a tribute to the man who transformed basic ingredients into a culinary masterpiece!

Modern Variations and Popularity

While the original Alfredo sauce consisted solely of butter and Parmesan cheese, it has evolved over time, particularly in American kitchens. Today, many recipes include heavy cream to create an even richer and creamier texture. Garlic, black pepper, and other seasonings are often added to enhance the flavor.

The versatility of Alfredo sauce has also led to numerous variations, including chicken, shrimp, broccoli, and other ingredients. This adaptability has helped Alfredo sauce maintain its popularity, making it a favorite for home cooks and restaurant chefs alike!
